Directions
Step 1
Rinse the dried pinto beans and remove any debris.
Step 2
In the Instant Pot, add the beans, water, chopped onion, minced garlic, salt, and ground cumin.

Close the lid and set the valve to the sealing position.
Step 4
Pressure cook on high for 45 minutes.
Step 5
Once the cooking time is complete, allow the pressure to release naturally for 20 minutes, then quick release any remaining pressure.
Step 6
Open the lid and use a potato masher or immersion blender to mash the beans to your desired consistency.
Step 7
Stir in the olive oil and adjust seasoning with more salt if needed.
Step 8
Serve warm as a side dish or filling for tacos and burritos.
