Ingredients

  • 1 bay leaf
  • 0.5 tsp black pepper
  • 400 g canned tomatoes
  • 2 carrots
  • 2 celery stalks
  • 300 ml chicken broth
  • 2 garlic cloves
  • 2 tbsp olive oil
  • 1 onion
  • 1 tsp salt
  • 6 sausages
  • 1 tsp thyme

Directions

Step 1
Heat the olive oil in a large pan over medium heat.
Step 2
Add the sausages and cook until browned on all sides. Remove and set aside.
Step 3
In the same pan, add the onion, carrots, celery, and garlic. Cook until the vegetables are softened.
Step 4
Add the canned tomatoes, chicken broth, thyme, bay leaf, salt, and pepper. Stir to combine.
Step 5
Return the sausages to the pan and bring the mixture to a boil.
Step 6
Reduce heat to low, cover, and simmer for 30 minutes, stirring occasionally.
Step 7
Remove the bay leaf before serving.
