  • 0.5 cup almonds
  • 2 cups basmati rice
  • 2 bay leaves
  • 1 tsp black pepper
  • 2 carrots
  • 1.5 kg chicken
  • 3 cloves garlic
  • 0.5 tsp ground cardamom
  • 0.5 tsp ground cinnamon
  • 0.5 tsp ground cloves
  • 1 tsp ground coriander
  • 1 tsp ground cumin
  • 0.5 tsp ground nutmeg
  • 1 onion
  • 0.5 cup raisins
  • 2 tsp salt
  • 2 tbsp tomato paste
  • 3 tomatoes
  • 3 tbsp vegetable oil
  • 4 cups water

Directions

Step 1
Heat the vegetable oil in a large pot over medium heat.
Step 2
Add the chopped onion and cook until golden brown.
Step 3
Stir in the garlic, tomatoes, and tomato paste, and cook for a few minutes.
Step 4
Add the chicken pieces to the pot and cook until they are browned on all sides.
Step 5
Mix in the grated carrots, salt, black pepper, cumin, coriander, cinnamon, cardamom, cloves, nutmeg, and bay leaves.
Step 6
Pour in the water and bring to a boil. Reduce the heat and let it simmer for about 30 minutes.
Step 7
Rinse the basmati rice under cold water until the water runs clear.
Step 8
Add the rice to the pot, making sure it is evenly distributed.
Step 9
Stir in the raisins and cover the pot. Cook over low heat for about 20-25 minutes until the rice is tender and the water is absorbed.
Step 10
Remove the pot from heat and let it sit, covered, for another 10 minutes.
Step 11
Fluff the rice with a fork and garnish with toasted almonds before serving.
