Ingredients

  • 50 g brown sugar
  • 50 g butter
  • 3 eggs
  • 12 maraschino cherries
  • 12 slices pineapple slices
  • 80 ml vegetable oil
  • 240 ml water
  • 1 box yellow cake mix

Directions

Step 1
Preheat oven to 180°C (350°F).
Step 2
Melt the butter and evenly distribute it in the bottoms of a 12-cup muffin tin.
Step 3
Sprinkle brown sugar evenly over the melted butter.
Step 4
Place one pineapple slice in each muffin cup and put a cherry in the center of each pineapple slice.
Step 5
Prepare the cake mix according to the package instructions, using water, vegetable oil, and eggs.
Step 6
Pour the cake batter over the pineapple slices, filling each muffin cup about three-quarters full.
Step 7
Bake for 20-25 minutes or until a toothpick inserted into the center comes out clean.
Step 8
Allow the cupcakes to cool in the pan for about 5 minutes.
Step 9
Run a knife around the edges of the cupcakes to loosen them, then invert the pan onto a baking sheet or large platter to release the cupcakes.
