Step 1
Peel the green skin off the watermelon rinds and cut them into bite-sized pieces.

In a large pot, combine the water, white vinegar, sugar, and salt. Bring to a boil, stirring until the sugar and salt are dissolved.

Add the watermelon rinds to the pot. Reduce the heat and simmer for about 10 minutes, or until the rinds are slightly tender.

Add the whole cloves, cinnamon sticks, and lemon slices to the pot. Continue to simmer for another 5 minutes.

Remove the pot from heat and let it cool to room temperature.
