Ingredients

  • 250 grams all-purpose flour
  • 120 grams butter
  • 30 grams cornstarch
  • 1 egg
  • 500 grams pineapple
  • 1 teaspoon salt
  • 200 grams sugar
  • 240 ml water

Directions

Step 1
Preheat oven to 180°C (350°F).
Step 2
In a large bowl, combine flour and salt. Cut in butter until mixture resembles coarse crumbs.
Step 3
Add water, 1 tablespoon at a time, until dough forms a ball. Wrap in plastic wrap and refrigerate for 30 minutes.
Step 4
On a lightly floured surface, roll out dough to fit a 9-inch pie plate. Transfer dough to pie plate; trim and flute edges.
Step 5
In a saucepan, combine sugar and cornstarch. Stir in crushed pineapple and water. Cook over medium heat, stirring constantly, until mixture thickens and boils.
Step 6
Remove from heat and pour into prepared crust.
Step 7
In a small bowl, beat egg. Brush over pie crust edges.
Step 8
Bake in preheated oven for 35-40 minutes or until crust is golden brown.
Step 9
Cool on a wire rack before serving.
