Ingredients

  • 0.5 cup cilantro
  • 400 ml coconut milk
  • 1 tsp coriander powder
  • 1 tsp cumin
  • 2 tbsp curry powder
  • 3 garlic cloves
  • 1 tbsp ginger
  • 1 onion
  • 1 tsp salt
  • 500 g shrimp
  • 2 tomatoes
  • 1 tsp turmeric
  • 2 tbsp vegetable oil

Directions

Step 1
Heat the vegetable oil in a large pan over medium heat.
Step 2
Add the chopped onions and sauté until they are golden brown.
Step 3
Add the minced garlic and grated ginger, and cook for another 2 minutes.
Step 4
Stir in the chopped tomatoes and cook until they soften.
Step 5
Add the curry powder, turmeric, cumin, coriander powder, and salt. Stir well.
Step 6
Pour in the coconut milk and bring to a simmer.
Step 7
Add the shrimp and cook until they turn pink and are cooked through, about 5-7 minutes.
Step 8
Garnish with fresh cilantro and serve hot with rice or naan.
