This slow roasted rabbit recipe yields tender, flavorful meat. Perfect for a special occasion or a delicious family meal, it involves marinating the rabbit before slowly roasting it to perfection.
Directions
Step 1
Preheat your oven to 150°C (300°F).
Step 2
In a large bowl, combine the olive oil, minced garlic, rosemary, thyme, lemon juice, white wine, salt, and black pepper.
Step 3
Place the rabbit in the bowl, making sure it is well coated with the marinade. Cover and refrigerate for at least 2 hours, preferably overnight.
Step 4
Remove the rabbit from the marinade and place it in a roasting pan.
Step 5
Pour the remaining marinade over the rabbit.
Step 6
Cover the roasting pan with foil and place it in the preheated oven.
Step 7
Roast the rabbit for 2.5 to 3 hours, basting occasionally with the pan juices, until the meat is tender and falling off the bone.
Step 8
Remove the foil during the last 30 minutes of cooking to allow the rabbit to brown.
Step 9
Let the rabbit rest for 10 minutes before carving and serving.
