  • 360 g all-purpose flour
  • 1 tsp baking soda
  • 150 g brown sugar
  • 1 egg
  • 1 tsp ground cinnamon
  • 0.5 tsp ground cloves
  • 2 tsp ground ginger
  • 120 ml molasses
  • 0.5 tsp salt
  • 170 g unsalted butter
  • 1 tsp vanilla extract

Directions

Step 1
In a medium bowl, whisk together the flour, ginger, cinnamon, cloves, baking soda, and salt. Set aside.
Step 2
In a large bowl, beat the butter and brown sugar with an electric mixer on medium speed until light and fluffy. Add the egg, molasses, and vanilla extract, and beat until combined.
Step 3
Gradually add the dry ingredients to the wet ingredients, mixing on low speed until combined. Divide the dough in half, shape into disks, wrap in plastic wrap, and refrigerate for at least 2 hours or overnight.
Step 4
Preheat the oven to 350°F (175°C) and line baking sheets with parchment paper.
Step 5
On a lightly floured surface, roll out one disk of dough to about 1/4-inch thickness. Use cookie cutters to cut out gingerbread men shapes and place them on the prepared baking sheets.
Step 6
Bake the cookies for 8-10 minutes, or until the edges are just starting to brown. Let the cookies cool on the baking sheets for a few minutes before transferring them to a wire rack to cool completely.
Step 7
Decorate the cooled cookies with icing and sprinkles as desired.
