Ingredients

  • 400 ml coconut milk
  • 1 tsp coriander
  • 1 tsp cumin
  • 2 tbsp curry powder
  • 1 handful fresh cilantro
  • 2 cloves garlic
  • 1 tbsp ginger
  • 1 onion
  • 200 g red lentils
  • 1 tsp salt
  • 400 g tomatoes
  • 1 tsp turmeric
  • 2 tbsp vegetable oil
  • 500 ml water

Directions

Step 1
Rinse the red lentils thoroughly under cold water.
Step 2
In a large pot, heat the vegetable oil over medium heat.
Step 3
Add the chopped onion, minced garlic, and grated ginger. Sauté until the onion becomes translucent.
Step 4
Stir in the curry powder, cumin, turmeric, and coriander. Cook for another minute until fragrant.
Step 5
Add the canned tomatoes and cook for 5 minutes, stirring occasionally.
Step 6
Pour in the coconut milk and water. Stir well to combine.
Step 7
Add the rinsed lentils and salt. Bring the mixture to a boil.
Step 8
Reduce the heat to low and let it simmer for 25-30 minutes or until the lentils are tender and the curry has thickened.
Step 9
Garnish with chopped fresh cilantro before serving.
