Preheat the oven to 220°C (425°F). Line a baking sheet with parchment paper.

Remove the stems and leaves from the cauliflower and chop into florets.

In a food processor, pulse the cauliflower until it has a rice-like texture.

Transfer the cauliflower rice to a microwave-safe bowl and microwave on high for 4-5 minutes, or until soft.
