Step 1
Preheat the oven to 175°C (350°F).

In a bowl, mix almond flour, melted butter, and 25g stevia until combined. Press the mixture into the bottom of a baking dish to form the crust.

Bake the crust for 10 minutes until lightly golden. Allow to cool while preparing the filling.

In a large bowl, beat the cream cheese and remaining stevia until smooth. Add the pumpkin puree, eggs, vanilla extract, pumpkin pie spice, and salt. Mix until fully combined.

Pour the mixture over the cooled crust and spread evenly.

Bake for 40 minutes or until the center is set. Allow to cool to room temperature, then refrigerate for at least 2 hours before cutting into bars.
