  • 0.5 tsp black pepper
  • 100 g feta cheese
  • 2 cloves garlic
  • 2 tbsp lemon juice
  • 2 tbsp olive oil
  • 1 tsp salt
  • 200 g spinach
  • 100 g sun-dried tomatoes
  • 4 swordfish fillets

Directions

Step 1
Preheat your oven to 200°C (400°F).
Step 2
In a skillet, heat 1 tbsp of olive oil over medium heat. Add the minced garlic and cook until fragrant, about 1 minute.
Step 3
Add the spinach and cook until wilted, about 3 minutes. Remove from heat and let it cool slightly.
Step 4
Chop the sun-dried tomatoes and add them to the skillet along with the crumbled feta cheese. Mix well.
Step 5
Season the swordfish fillets with salt and black pepper. Cut a slit into the side of each fillet to create a pocket.
Step 6
Stuff each fillet with the spinach mixture and secure with toothpicks if necessary.
Step 7
Place the stuffed fillets in a baking dish. Drizzle with the remaining olive oil and lemon juice.
Step 8
Bake in the preheated oven for 20-25 minutes, or until the fish is cooked through.
Step 9
Remove from the oven and let it rest for a few minutes before serving.
