Ingredients

  • 225 grams all-purpose flour
  • 2 tablespoons cold water
  • 1 egg yolk
  • 200 grams jam
  • 50 grams sugar
  • 115 grams unsalted butter

Directions

Step 1
Preheat your oven to 180°C (350°F).
Step 2
In a large bowl, mix the flour and sugar together.
Step 3
Add the chilled, cubed butter to the flour mixture. Using your fingertips, rub the butter into the flour until the mixture resembles breadcrumbs.
Step 4
Add the egg yolk and cold water to the mixture, and mix until the dough comes together.
Step 5
Wrap the dough in plastic wrap and chill in the refrigerator for 30 minutes.
Step 6
Roll out the dough on a lightly floured surface to about 1/8 inch thickness.
Step 7
Cut out circles of dough using a cookie cutter and place them into a tartlet or muffin tin.
Step 8
Fill each pastry cup with a spoonful of jam.
Step 9
Bake in the preheated oven for 15-20 minutes, or until the pastry is golden brown.
Step 10
Allow the tarts to cool in the tin for a few minutes before transferring to a wire rack to cool completely.
