Directions

Step 1
In a large pot, combine the water, salt, and sugar. Stir until the salt and sugar are completely dissolved.

Add the smashed garlic cloves, bay leaves, and peppercorns to the pot.

Bring the mixture to a boil, then remove from heat and let it cool to room temperature.

Submerge the chicken in the brine, ensuring it is fully covered. Refrigerate for at least 1 hour and up to 6 hours.
