Directions
Step 1
Rinse the navy beans under cold water and remove any debris. Place the beans in a large pot and cover with water. Let them soak overnight or use the quick-soak method by boiling them for 2 minutes and then letting them sit for 1 hour.
Step 2
Drain and rinse the soaked beans. Return them to the pot and add 8 cups of water, ham hock, chopped onion, carrots, celery, garlic, and bay leaf.
Step 3
Bring to a boil, then reduce the heat and simmer for about 1.5 to 2 hours, or until the beans are tender.
Step 4
Remove the ham hock from the pot. Once cool enough to handle, remove the meat from the bone, chop it, and return it to the soup.
Step 5
Season the soup with salt and black pepper to taste. Stir in the chopped parsley just before serving.
