  • 130 grams all-purpose flour
  • 5 grams baking powder
  • 2 eggs
  • 100 grams granulated sugar
  • 1 teaspoon lemon zest
  • 15 grams powdered sugar
  • 1 grams salt
  • 115 grams unsalted butter
  • 5 milliliters vanilla extract

Directions

Step 1
In a bowl, whisk together the flour, baking powder, and salt.

In a separate large bowl, beat the eggs and sugar until pale and thick.

Mix in the vanilla extract and lemon zest.
Step 4
Gently fold in the flour mixture until just combined.

Fold in the melted butter until the batter is smooth.

Cover the bowl with plastic wrap and refrigerate for at least 1 hour or overnight.

Preheat the oven to 375°F (190°C). Grease and flour a madeleine pan.

Spoon the batter into the molds, filling each about three-quarters full.
