In a large pot, cook bacon over medium heat until crispy. Remove bacon and set aside, leaving the drippings in the pot.

Add diced onion, garlic, and jalapeño to the pot. Sauté until onions are translucent.

Add the dried pinto beans, diced tomatoes, cilantro, beer, and water to the pot. Stir to combine.

Bring the mixture to a boil, then reduce heat to low and simmer, covered, for 2 to 3 hours, or until beans are tender.
