  • 100 g bacon
  • 355 ml beer
  • 0.5 cup cilantro
  • 3 cloves garlic
  • 1 jalapeño
  • 1 onion
  • 1 tsp pepper
  • 450 g pinto beans
  • 1 tsp salt
  • 400 g tomato
  • 700 ml water

Directions

Step 1
In a large pot, cook bacon over medium heat until crispy. Remove bacon and set aside, leaving the drippings in the pot.
Step 2
Add diced onion, garlic, and jalapeño to the pot. Sauté until onions are translucent.
Step 3
Add the dried pinto beans, diced tomatoes, cilantro, beer, and water to the pot. Stir to combine.
Step 4
Bring the mixture to a boil, then reduce heat to low and simmer, covered, for 2 to 3 hours, or until beans are tender.
Step 5
Stir occasionally and check the liquid level, adding more water if necessary to keep the beans covered.
Step 6
Once beans are tender, stir in the cooked bacon, salt, and pepper. Adjust seasonings to taste.
Step 7
Serve hot, garnished with additional cilantro if desired.
