  • 0.5 cup cilantro
  • 1 tbsp cumin
  • 4 garlic cloves
  • 1 jalapeno
  • 2 tbsp olive oil
  • 1 onion
  • 1 tsp oregano
  • 1 tsp pepper
  • 500 g pinto beans
  • 2 tsp salt
  • 2000 ml water

Directions

Step 1
Rinse the pinto beans under cold water and remove any debris.
Step 2
In a large pot, heat the olive oil over medium heat.
Step 3
Add the chopped onion, minced garlic, and chopped jalapeno. Sauté until the onion is translucent.
Step 4
Add the cumin and oregano, stirring for about 1 minute to release the flavors.
Step 5
Add the rinsed pinto beans to the pot and cover with water.
Step 6
Bring to a boil, then reduce the heat and simmer for about 1.5 to 2 hours, or until the beans are tender.
Step 7
Season with salt and pepper to taste.

Stir in the chopped fresh cilantro before serving.
