Ingredients

  • 0.5 tsp black pepper
  • 120 g cream cheese
  • 2 cloves garlic
  • 1 tbsp lemon juice
  • 2 tbsp olive oil
  • 4 salmon fillets
  • 1 tsp salt
  • 150 g spinach

Directions

Step 1
Preheat your oven to 190°C (375°F).
Step 2
In a pan, heat 1 tbsp of olive oil over medium heat. Add the minced garlic and chopped spinach. Cook until the spinach is wilted. Remove from heat and let it cool.
Step 3
In a bowl, mix the softened cream cheese, wilted spinach, lemon juice, salt, and black pepper until well combined.
Step 4
Cut a slit in the side of each salmon fillet to create a pocket. Stuff each pocket with the cream cheese mixture.
Step 5
Place the stuffed salmon fillets on a baking sheet lined with parchment paper. Drizzle the remaining 1 tbsp of olive oil over the fillets.
Step 6
Bake in the preheated oven for 20-25 minutes, or until the salmon is cooked through and flakes easily with a fork.
Step 7
Serve hot, garnished with a slice of lemon and fresh herbs if desired.
