Ingredients

  • 300 g all-purpose flour
  • 10 g baking powder
  • 1 egg
  • 50 g granulated sugar
  • 180 ml heavy cream
  • 2 g salt
  • 450 g strawberries
  • 85 g unsalted butter
  • 5 ml vanilla extract
  • 240 ml whipped cream

Directions

Step 1
Preheat the oven to 400°F (200°C). Line a baking sheet with parchment paper.
Step 2
In a large bowl, whisk together the flour, sugar, baking powder, and salt.
Step 3
Add the cold butter pieces and cut into the flour mixture using a pastry cutter or your fingers until the mixture resembles coarse crumbs.

In a separate bowl, whisk together the heavy cream, egg, and vanilla extract.
Step 5
Pour the wet ingredients into the dry ingredients and mix until just combined. Do not overmix.
Step 6
Turn the dough out onto a lightly floured surface and knead gently until it comes together. Pat the dough into a 1-inch thick circle.

Use a biscuit cutter to cut out shortcakes and place them onto the prepared baking sheet.

Bake for 15-18 minutes, or until the shortcakes are golden brown. Allow to cool on a wire rack.
Step 9
While the shortcakes are cooling, prepare the strawberries by hulling and slicing them.
Step 10
To assemble, split each shortcake in half and spoon strawberries and whipped cream over the bottom half. Place the top half of the shortcake on top and serve immediately.
