This classic roast leg of lamb recipe is perfect for a special family dinner or holiday feast. The lamb is seasoned with garlic, rosemary, and lemon, then roasted to perfection.

Ingredients

  • 1 tbsp black pepper
  • 4 sprigs fresh rosemary
  • 6 garlic cloves
  • 2 kg leg of lamb
  • 1 lemon
  • 60 ml olive oil
  • 1 tbsp salt

Directions

Step 1
Preheat your oven to 180°C (350°F).
Step 2
Make small incisions all over the leg of lamb and insert garlic slices into each incision.
Step 3
Rub the lamb with olive oil, lemon zest, lemon juice, rosemary, salt, and black pepper.
Step 4
Place the lamb on a roasting rack in a roasting pan.
Step 5
Roast the lamb in the preheated oven for about 90 minutes, or until the internal temperature reaches 60°C (140°F) for medium-rare.
Step 6
Let the lamb rest for 15 minutes before carving.
