  • 1 chicken carcasses
  • 50 g dried shiitake mushrooms
  • 30 g garlic
  • 50 g ginger
  • 10 g kombu
  • 50 ml mirin
  • 1000 g pork bones
  • 100 ml soy sauce
  • 100 g spring onions
  • 4000 ml water

Directions

Step 1
Blanch the pork bones and chicken carcass in boiling water for 10 minutes. Drain and rinse the bones to remove impurities.
Step 2
In a large pot, add the blanched bones, chicken carcass, ginger, garlic, and spring onions.
Step 3
Add the water to the pot and bring it to a boil. Once boiling, reduce the heat to a simmer.
Step 4
Skim off any scum that rises to the surface during simmering.
Step 5
After about 2 hours, add the dried shiitake mushrooms and kombu to the pot.
Step 6
Continue to simmer for another 2 hours, skimming occasionally.
Step 7
After 4 hours of total simmering, strain the broth through a fine mesh sieve into another pot or large container.
Step 8
Add the soy sauce and mirin to the strained broth and stir to combine.
Step 9
Taste and adjust seasoning if necessary. The broth is now ready to be used in your favorite ramen recipe.
