Ingredients

  • 1 bay leaf
  • 0.5 tsp black pepper
  • 3 carrots
  • 2 celery stalks
  • 3 garlic cloves
  • 500 g mushrooms
  • 2 tbsp olive oil
  • 1 onion
  • 2 tbsp parsley
  • 1 cup pearl barley
  • 1 tsp salt
  • 1 tsp thyme
  • 6 cups vegetable broth

Directions

Step 1
Heat olive oil in a large pot over medium heat.
Step 2
Add diced onion, sliced carrots, and celery. Cook until vegetables are softened, about 5 minutes.
Step 3
Add minced garlic and sliced mushrooms. Cook until mushrooms are browned, about 5 minutes.
Step 4
Stir in the pearl barley, vegetable broth, bay leaf, thyme, salt, and black pepper.
Step 5
Bring to a boil, then reduce heat and let simmer for 45 minutes, or until barley is tender.
Step 6
Remove the bay leaf. Stir in chopped parsley before serving.
