  • 100 g black olives
  • 0.5 tsp black pepper
  • 200 g cherry tomatoes
  • 1 cucumber
  • 1 tsp dried oregano
  • 100 g feta cheese
  • 15 ml lemon juice
  • 60 ml olive oil
  • 250 g pasta
  • 1 red bell pepper
  • 0.5 red onion
  • 30 ml red wine vinegar
  • 1 tsp salt

Directions

Step 1
Cook the pasta according to the package instructions. Drain and rinse with cold water to cool.
Step 2
Chop the cherry tomatoes, cucumber, red bell pepper, and red onion into bite-sized pieces.
Step 3
In a large bowl, combine the cooked pasta, chopped vegetables, and black olives.
Step 4
In a small bowl, whisk together the olive oil, red wine vinegar, lemon juice, dried oregano, salt, and black pepper to make the dressing.
Step 5
Pour the dressing over the pasta salad and toss to combine.
Step 6
Crumble the feta cheese over the salad and gently mix.
Step 7
Serve immediately or refrigerate for up to 2 hours to let the flavors meld.
