  • 2 g black pepper
  • 4 carrots
  • 60 ml olive oil
  • 3 parsnips
  • 2 red onions
  • 5 g rosemary
  • 5 g salt
  • 2 sweet potatoes
  • 5 g thyme

Directions

Step 1
Preheat your oven to 200°C (400°F).
Step 2
In a large bowl, combine the chopped carrots, parsnips, sweet potatoes, and red onions.
Step 3
Drizzle the vegetables with olive oil and sprinkle with salt, black pepper, rosemary, and thyme. Toss well to coat evenly.
Step 4
Spread the seasoned vegetables in a single layer on a large baking sheet.

Roast in the preheated oven for 35-40 minutes, or until the vegetables are tender and caramelized, stirring halfway through the cooking time.
