Directions
Step 1
Preheat oven to 250 degrees F (120 degrees C). Place popcorn in a large roasting pan and set aside.

In a medium saucepan over medium heat, combine brown sugar, butter, corn syrup, and salt. Stirring constantly, bring to a boil.

Boil without stirring for 5 minutes. Remove from heat and stir in baking soda and vanilla extract.
Step 4
Pour caramel mixture over popcorn, stirring to coat evenly.
Step 5
Bake in preheated oven for 1 hour, stirring every 15 minutes.
Step 6
Remove from oven and let cool completely before breaking into pieces.
