A simple and traditional method to prepare a creamy and versatile Quark cheese at home, perfect for various culinary applications.

  • 100 ml buttermilk
  • 1000 ml whole milk

Directions

Step 1
Pour the whole milk into a large pot and heat it gently until it reaches 30°C.
Step 2
Remove the pot from the heat and stir in the buttermilk.
Step 3
Cover the pot with a clean cloth and let it sit at room temperature for 24 hours to allow the mixture to ferment.
Step 4
After 24 hours, the milk should have thickened into a yogurt-like consistency.
Step 5
Gently heat the mixture to 40°C, then remove from heat.
Step 6
Line a colander with a clean cheesecloth and pour the mixture into it to drain the whey.
Step 7
Let it drain for several hours or until the desired consistency is reached.
Step 8
Transfer the quark to a container and store it in the refrigerator.
