  • 1 cucumber
  • 4 green onions
  • 2 tbsp lemon juice
  • 3 tbsp olive oil
  • 2 tbsp parsley
  • 1 red bell pepper
  • 200 g rice
  • 1 tsp salt
  • 2 tomato

Directions

Step 1
Cook the rice according to the package instructions. Once cooked, let it cool completely.
Step 2
Dice the cucumber, tomatoes, and red bell pepper. Slice the green onions thinly.
Step 3
In a large bowl, combine the cooked rice, diced vegetables, and green onions.
Step 4
In a small bowl, whisk together the olive oil, lemon juice, salt, and black pepper.
