Traditional Beef Pho

Ingredients

  • 200 g bean sprouts
  • 2 kg beef bones
  • 500 g beef sirloin
  • 2 chili
  • 1 cinnamon stick
  • 6 cloves
  • 60 ml fish sauce
  • 100 g fresh herbs
  • 100 g ginger
  • 2 lime
  • 2 onion
  • 500 g rice noodles
  • 50 g rock sugar
  • 1 tbsp salt
  • 6 star anise

Directions

Step 1
Place the beef bones in a large pot and cover with water. Bring to a boil and then drain and rinse the bones.
Step 2
In a clean pot, add the bones, onions, ginger, star anise, cloves, and cinnamon stick. Cover with 5 liters of water and bring to a boil.
Step 3
Reduce the heat and simmer for at least 4 hours, skimming off any impurities that rise to the surface.
Step 4
Strain the broth through a fine sieve into a clean pot. Add the fish sauce, rock sugar, and salt. Adjust seasoning to taste.
Step 5
Cook the rice noodles according to the package instructions. Drain and set aside.
Step 6
To serve, place a portion of noodles in a bowl. Top with raw beef slices, bean sprouts, and fresh herbs.
Step 7
Ladle the hot broth over the ingredients in the bowl, cooking the beef slices. Serve with lime wedges and sliced chili on the side.
