Preheat your oven to 200°C (392°F).

Wash and peel the carrots, then cut them into thin slices.

Wash the zucchinis and cut them into slices.

Remove the seeds from the bell pepper and cut it into strips.

Peel the red onion and cut it into thin wedges.

Place all the cut vegetables into a large mixing bowl.

Drizzle the olive oil over the vegetables and add the salt, black pepper, and dried thyme.

Toss the vegetables in the bowl until they are evenly coated with the oil and seasonings.
