  • 0.5 tsp black pepper
  • 4 bread slices
  • 1 stalk celery
  • 2 chicken breast
  • 1 tbsp lemon juice
  • 4 leaves lettuce
  • 50 g mayonnaise
  • 0.5 red onion
  • 1 tsp salt
  • 1 tomato

Directions

Step 1
Preheat a grill or grill pan over medium-high heat.
Step 2
Season the chicken breasts with salt and black pepper.
Step 3
Grill the chicken for 6-7 minutes on each side, or until fully cooked.
Step 4
Let the chicken cool, then chop into small pieces.
Step 5
In a large bowl, combine the chopped chicken, mayonnaise, celery, red onion, and lemon juice. Mix well.

Toast the bread slices if desired.
Step 7
Assemble the sandwiches by placing lettuce leaves on 2 slices of bread, then adding the chicken salad mixture, tomato slices, and topping with the remaining bread slices.
