  • 1 bay leaf
  • 1 bell pepper
  • black pepper
  • 1 tablespoon cajun seasoning
  • 2 stalks celery
  • 450 grams chicken breast
  • 500 milliliters chicken broth
  • 400 grams diced tomatoes
  • 3 cloves garlic
  • 2 tablespoons olive oil
  • 1 onion
  • 200 grams rice
  • salt
  • 225 grams shrimp
  • 225 grams smoked sausage
  • 1 teaspoon thyme

Directions

Step 1
Heat the olive oil in a large pot over medium heat.
Step 2
Add the chicken and sausage to the pot, and cook until the chicken is no longer pink.
Step 3
Add the onion, bell pepper, celery, and garlic to the pot, and sauté until the vegetables are tender.
Step 4
Stir in the diced tomatoes, chicken broth, rice, Cajun seasoning, thyme, bay leaf, salt, and black pepper.
Step 5
Bring the mixture to a boil, then reduce the heat to low. Cover and simmer for 20-25 minutes, or until the rice is cooked.

Add the shrimp to the pot, and cook for an additional 5-7 minutes, or until the shrimp are pink and opaque.
