  • 1 bell pepper
  • 0.5 tsp black pepper
  • 100 g cheddar cheese
  • 200 g cherry tomatoes
  • 12 egg whites
  • 2 cloves garlic
  • 1 tbsp olive oil
  • 1 onion
  • 1 tsp salt
  • 150 g spinach

Directions

Step 1
Preheat your oven to 180°C (350°F).
Step 2
Heat olive oil in a large skillet over medium heat.
Step 3
Add the diced onion and minced garlic to the skillet and sauté until the onion is translucent.
Step 4
Add the spinach and bell pepper to the skillet, cooking until the spinach is wilted and the bell pepper is softened.

In a large bowl, whisk the egg whites with salt and black pepper.

Stir in the sautéed vegetables and halved cherry tomatoes into the egg whites.

Pour the mixture into a greased baking dish.

Sprinkle the shredded cheddar cheese evenly on top.
