  • 200 g chocolate
  • 100 ml corn syrup
  • 120 ml heavy cream
  • 200 g sugar
  • 1 tsp vanilla extract

Directions

Step 1
In a saucepan, combine sugar, corn syrup, and butter. Cook over medium heat, stirring constantly, until the mixture reaches 120°C (248°F) on a candy thermometer.
Step 2
Gradually add the heavy cream and continue to cook, stirring constantly, until the mixture reaches 120°C (248°F) again.
Step 3
Remove from heat and stir in the vanilla extract.
Step 4
Pour the caramel mixture into a parchment-lined baking dish and let it cool completely.
Step 5
Once the caramel is set, cut it into small squares.
Step 6
Melt the chocolate in a microwave or double boiler until smooth.
Step 7
Dip each caramel square into the melted chocolate, ensuring it is fully coated. Place the chocolate-covered caramels on a parchment-lined baking sheet to set.

Allow the chocolate to harden completely before serving or storing.
