Suspiro Limeño is a classic Peruvian dessert made of sweetened condensed milk, evaporated milk, and eggs. It's topped with a light and airy meringue flavored with port wine or vanilla, creating a deliciously sweet and creamy treat.

Step 1
In a saucepan, combine the sweetened condensed milk and evaporated milk. Cook over medium heat, stirring constantly, until the mixture thickens, about 20 minutes.

Remove from heat and let it cool slightly. Beat the egg yolks and slowly mix them into the milk mixture. Return to low heat and cook for another 5 minutes, stirring constantly. Remove from heat and let cool.

In another saucepan, combine the sugar and water. Cook over medium heat until the syrup reaches a soft ball stage (about 115°C or 240°F).
Step 4
In a bowl, beat the egg whites until soft peaks form. Gradually add the hot syrup while continuing to beat until the meringue is thick and glossy. Add the port wine or vanilla extract and beat until incorporated.
Step 5
Pour the milk mixture into serving glasses or bowls. Top with the meringue. Serve chilled.
