  • 120 g bacon
  • 1 bay leaf
  • 1 bell pepper
  • 0.5 tsp black pepper
  • 450 g black-eyed peas
  • 2 stalks celery
  • 1.5 l chicken broth
  • 3 cloves garlic
  • 1 onion
  • 1 tsp salt

Directions

Step 1
Rinse the black-eyed peas and soak them in water overnight.
Step 2
Drain and rinse the peas before cooking.
Step 3
In a large pot, cook the chopped bacon over medium heat until crispy. Remove and set aside, leaving the bacon fat in the pot.
Step 4
Add the chopped onion, garlic, bell pepper, and celery to the pot. Sauté until the vegetables are tender, about 5-7 minutes.
Step 5
Add the soaked black-eyed peas, chicken broth, bay leaf, salt, and black pepper to the pot.
Step 6
Bring the mixture to a boil, then reduce heat and let it simmer, covered, for about 1.5 hours or until the peas are tender.
Step 7
Remove the bay leaf and stir in the cooked bacon.
Step 8
Adjust seasoning with additional salt and pepper if needed.
