Ingredients

  • 1 teaspoon black pepper
  • 4 eggs
  • 2 cloves garlic
  • 1 tablespoon olive oil
  • 150 grams pancetta
  • 100 grams parmesan cheese
  • 1 teaspoon salt
  • 400 grams spaghetti

Directions

Step 1
Bring a large pot of salted water to a boil. Add the spaghetti and cook according to the package instructions until al dente.
Step 2
While the pasta is cooking, heat the olive oil in a large skillet over medium heat. Add the pancetta and cook until crispy, about 5-7 minutes.
Step 3
Add the minced garlic to the skillet and cook for an additional minute, stirring constantly.
Step 4
In a medium bowl, whisk together the eggs, grated Parmesan cheese, black pepper, and salt until well combined.
Step 5
Drain the cooked pasta, reserving 1/2 cup of the pasta water.
Step 6
Quickly add the hot pasta to the skillet with the pancetta and garlic. Remove the skillet from the heat.
Step 7
Pour the egg and cheese mixture over the pasta, tossing quickly to combine. Add a bit of the reserved pasta water if the sauce is too thick.
Step 8
Serve immediately, garnished with additional grated Parmesan cheese and freshly ground black pepper, if desired.
