  • 500 ml beef broth
  • 1.5 kg beef chuck roast
  • 1 tsp black pepper
  • 4 carrots
  • 4 garlic cloves
  • 2 tbsp olive oil
  • 2 onions
  • 5 potatoes
  • 2 tsp salt
  • 1 tsp thyme

Directions

Step 1
Preheat your oven to 160°C (325°F).
Step 2
Heat olive oil in a large Dutch oven over medium-high heat.
Step 3
Season the beef roast with salt and black pepper, then sear it in the hot oil until browned on all sides.
Step 4
Remove the beef from the pot and set aside.
Step 5
In the same pot, add onions, carrots, and garlic cloves. Cook until vegetables are softened.
Step 6
Return the beef to the pot and add potatoes, beef broth, and thyme.
Step 7
Cover the pot and transfer it to the preheated oven.
Step 8
Cook for 3-4 hours, or until the beef is tender and easily shreds with a fork.
Step 9
Remove from oven and let it rest for a few minutes before serving.
