Basic Vegetable Stock

Ingredients

  • 2 bay leaves
  • 3 carrots
  • 3 celery stalks
  • 4 garlic cloves
  • 2 onions
  • 10 g parsley
  • 1 tsp peppercorns
  • 1 tsp thyme
  • 3000 ml water

Directions

Step 1
In a large pot, combine all ingredients.
Step 2
Bring to a boil over high heat.
Step 3
Reduce heat to low and simmer for 45 minutes.
Step 4
Strain the stock through a fine-mesh sieve.
Step 5
Discard the solids and let the stock cool.
Step 6
Store in the refrigerator for up to 5 days or freeze for later use.
