Traditional Pad Thai Noodles

Ingredients

  • 100 g bean sprouts
  • 200 g chicken breast
  • 2 egg
  • 3 tbsp fish sauce
  • 4 cloves garlic
  • 3 green onions
  • 1 lime
  • 2 tbsp palm sugar
  • 50 g peanuts
  • 200 g rice noodles
  • 150 g shrimp
  • 2 tbsp tamarind paste
  • 3 tbsp vegetable oil

Directions

Step 1
Soak the rice noodles in warm water for about 20 minutes or until soft. Drain and set aside.
Step 2
In a small bowl, mix together the fish sauce, tamarind paste, and palm sugar until well combined.
Step 3
Heat 1 tbsp of vegetable oil in a large pan or wok over medium-high heat. Add the chicken and shrimp, and cook until they are just done. Remove from the pan and set aside.
Step 4
In the same pan, add another tbsp of oil and the minced garlic. Stir fry until fragrant.
Step 5
Push the garlic to the side and add the beaten eggs. Scramble them until they are just cooked.
Step 6
Add the softened noodles, fish sauce mixture, cooked chicken, and shrimp back into the pan. Toss everything together and cook for a few more minutes.
Step 7
Add the bean sprouts and green onions. Stir everything together until well mixed and heated through.
Step 8
Serve hot, garnished with crushed peanuts and lime wedges on the side.
