Ingredients

  • 1 tsp allspice
  • 0.5 tsp black pepper
  • 2 carrots
  • 2 tbsp curry powder
  • 4 garlic cloves
  • 1 tbsp ginger
  • 1000 g goat meat
  • 1 onion
  • 2 potatoes
  • 1 tsp salt
  • 1 scotch bonnet pepper
  • 1 tsp thyme
  • 2 tbsp vegetable oil
  • 700 ml water

Directions

Step 1
In a large bowl, combine the goat meat, curry powder, onion, garlic, ginger, scotch bonnet pepper, thyme, allspice, salt, and black pepper. Mix well to coat the meat evenly. Cover and refrigerate for at least 2 hours, preferably overnight.
Step 2
Heat the vegetable oil in a large pot over medium-high heat. Add the marinated goat meat and cook until browned on all sides.
Step 3
Add the water to the pot and bring to a boil. Reduce the heat to low, cover, and simmer for 1.5 to 2 hours, or until the meat is tender.
Step 4
Add the potatoes and carrots to the pot. Continue to simmer for an additional 30 minutes, or until the vegetables are cooked through and the sauce is thickened.
Step 5
Adjust seasoning with salt and pepper to taste. Serve hot with rice or roti.
