Step 1
In a medium saucepan, heat the milk and heavy cream over medium heat until it begins to simmer.

In a separate bowl, whisk together the granulated sugar and egg yolks until the mixture is pale and thick.

Slowly pour the hot milk and cream mixture into the egg yolk mixture, whisking constantly to prevent curdling.

Return the mixture to the saucepan and cook over low heat, stirring constantly, until it thickens and coats the back of a spoon.

Remove from heat and stir in the vanilla extract. Let the custard cool completely.

Mash the bananas and fold them into the cooled custard mixture.

Chill the mixture in the refrigerator for at least 2 hours.

Pour the chilled mixture into an ice cream maker and churn according to the manufacturer's instructions.
