Ingredients

  • 1 avocado
  • 1 bell pepper
  • 1 cup black beans
  • 0.5 cup cilantro
  • 1 cup corn
  • 1 lime
  • 1 tbsp olive oil
  • 1 onion
  • 2 tbsp taco seasoning
  • 8 tortillas
  • 1 zucchini

Directions

Step 1
Heat the olive oil in a large skillet over medium heat.
Step 2
Add the chopped onion and bell pepper and cook until softened, about 5 minutes.
Step 3
Stir in the chopped zucchini and corn kernels and cook for another 5 minutes.
Step 4
Add the black beans and taco seasoning, stirring to combine. Cook for an additional 3-4 minutes.
Step 5
Warm the tortillas in a separate pan or in the microwave.
