  • 225 grams brown sugar
  • 225 grams butter
  • 4 eggs
  • 2 tablespoons milk
  • 450 grams mixed dried fruits
  • 2 teaspoons mixed spice
  • 225 grams self-raising flour

Directions

Step 1
Preheat your oven to 150°C (300°F). Grease and line a 20cm (8 inch) round cake tin.
Step 2
In a large bowl, cream the butter and brown sugar together until light and fluffy.
Step 3
Beat in the eggs one at a time, mixing well after each addition.
Step 4
Fold in the self-raising flour and mixed spice.
Step 5
Stir in the mixed dried fruits and milk until evenly combined.
Step 6
Pour the mixture into the prepared cake tin and level the top.
Step 7
Bake in the preheated oven for 2 hours or until a skewer inserted into the center comes out clean.
Step 8
Allow the cake to cool in the tin for 10 minutes before transferring to a wire rack to cool completely.
