Ingredients

  • 1 carrot
  • 200 g chicken breast
  • 500 g cooked rice
  • 2 eggs
  • 150 g frozen peas
  • 2 cloves garlic
  • 2 green onions
  • 1 onion
  • 3 tbsp soy sauce
  • 2 tbsp vegetable oil

Directions

Step 1
Heat 1 tablespoon of vegetable oil in a large pan or wok over medium-high heat.
Step 2
Add the diced chicken breast and cook until fully cooked through, then remove from the pan and set aside.
Step 3
In the same pan, add the remaining vegetable oil and sauté the chopped onion, garlic, diced carrot, and frozen peas until the vegetables are tender.
Step 4
Push the vegetables to one side of the pan and crack the eggs onto the other side. Scramble the eggs until fully cooked, then mix with the vegetables.
Step 5
Add the cooked rice to the pan, followed by the cooked chicken (if using). Stir well to combine all ingredients.
Step 6
Pour the soy sauce over the rice mixture, stirring continuously to evenly distribute the sauce.
Step 7
Add the chopped green onions and cook for another 2 minutes, stirring occasionally.
Step 8
Serve hot and enjoy your delicious fried rice.
