Ingredients

  • 2 carrots
  • 2 celery stalks
  • 300 grams cheese tortellini
  • 400 grams diced tomatoes
  • 1 teaspoon dried basil
  • 1 teaspoon dried oregano
  • 3 garlic cloves
  • 240 ml heavy cream
  • 2 tablespoons olive oil
  • 1 onion
  • salt
  • 120 grams spinach
  • 960 ml vegetable broth

Directions

Step 1
Heat the olive oil in a large pot over medium heat.
Step 2
Add the diced onion and cook until translucent, about 5 minutes.
Step 3
Stir in the minced garlic, sliced carrots, and sliced celery. Cook for another 5 minutes.
Step 4
Add the diced tomatoes, vegetable broth, dried basil, and dried oregano. Bring to a boil.
Step 5
Reduce heat and let it simmer for 10 minutes, or until the vegetables are tender.
Step 6
Add the fresh spinach and cheese tortellini. Cook according to the tortellini package instructions, usually about 5-7 minutes.
Step 7
Stir in the heavy cream and season with salt and black pepper to taste.
