Ingredients

  • 400 g black beans
  • 0.5 tsp black pepper
  • 200 g cheddar cheese
  • 200 g corn
  • 400 g diced tomatoes
  • 250 g egg noodles
  • 2 cloves garlic
  • 500 g ground beef
  • 1 tbsp olive oil
  • 1 onion
  • 1 tsp salt
  • 120 g sour cream
  • 30 g taco seasoning

Directions

Step 1
Preheat the oven to 180°C (350°F).
Step 2
Cook the egg noodles according to package instructions and set aside.
Step 3
In a large skillet, heat the olive oil over medium heat. Add the diced onion and minced garlic, and cook until the onion is translucent.
Step 4
Add the ground beef to the skillet, breaking it apart with a spatula. Cook until browned and no longer pink.
Step 5
Stir in the taco seasoning, diced tomatoes, corn, black beans, salt, and black pepper. Let the mixture simmer for about 5 minutes.
Step 6
In a large bowl, combine the cooked egg noodles with the beef mixture. Stir in the sour cream and half of the shredded cheddar cheese.
Step 7
Transfer the mixture to a casserole dish and spread evenly. Sprinkle the remaining cheddar cheese on top.
Step 8
Bake in the preheated oven for 20-25 minutes, or until the cheese is melted and bubbly.
Step 9
Remove from the oven and let it cool for a few minutes before serving.
