Step 1
Heat the olive oil in a large pot over medium heat.

Add the chopped onion and minced garlic. Cook until the onion is translucent.

Add the fresh tomatoes and cook for about 10 minutes until they begin to break down.

Pour in the vegetable broth and bring the mixture to a boil. Reduce the heat and simmer for 20 minutes.

Use an immersion blender to puree the soup until smooth.

Stir in the salt, black pepper, and basil leaves. Simmer for another 5 minutes.

Remove from heat and stir in the cream.
