Spicy Kimchi Soup

A hearty and spicy Korean soup made with kimchi, tofu, and vegetables, perfect for a warming meal.

Ingredients

  • 3 cloves garlic
  • 2 tbsp gochujang
  • 2 green onion
  • 200 g kimchi
  • 1 onion
  • 150 g pork belly
  • 1 tsp salt
  • 2 tbsp soy sauce
  • 300 g tofu
  • 4 cups water

Directions

Step 1
In a large pot, heat a small amount of oil over medium heat. Add the sliced pork belly and cook until browned.
Step 2
Add the minced garlic and sliced onion to the pot and sauté until the onion is translucent.
Step 3
Stir in the gochujang and soy sauce, and cook for another 2 minutes.
Step 4
Add the kimchi and water to the pot. Bring to a boil, then reduce the heat and simmer for 20 minutes.
Step 5
Add the cubed tofu and salt to the pot, and continue to simmer for another 10 minutes.
Step 6
Garnish with chopped green onions before serving. Enjoy your spicy kimchi soup!
